Paris is a feast !

Don’t listen people who says « Paris is not Paris anymore »… Negative guys are wrong. Whether they are food critic or USA President. The reality is that Paris has never been as rich, beautiful and gourmet as now.

Crisis ? Which crisis ? Crisis is in speeches for so long, and it’s its fault when something bad happens. Attacks ? We will never forget, but… the line is still long at Angelina's historic pâtisserie on Rivoli street. The Ritz palace hotel has fastuously reopened last summer with talented Executive Chef Nicolas Sale in the kitchen. Young pastry chefs, mostly trained at starred restaurants, open their own chic pâtisseries with an incredible success. Don’t miss to visit Yann Couvreur’s shop at Metro Goncourt. 

Paris is a style, a symbol, a flag.
Queen of the world’s gastronomy, Paris is the temple of rising star young chefs such as David Toutain (awarded Chef of the Year 2017 in Pudlo Paris guide), Akrame, Laurent Magnin who has not turned 30 yet (trained at Violier’s) and excels in the 18th arrondissement without forgetting David Bizet at the Orangerie of the George V. In all quarters, you will find lots of great restaurants. One is called Sourire (smile) in the 13th. Another one is called La Vie (the life) in the 2nd. Yes Paris is an alive and smiling city!

 My list also features the artisans, the ones who contribute to make Paris great: bakers, pastry chefs, chocolate makers, fish mongers, honey experts, sommeliers and especially women sommeliers: Paz Levinson at Virtus, Caroline Furstoss from Alsace at Le Grand restaurant (Chef Piege).

I am proud of my city whose symbol is not only the Eiffel Tower but also the temple of gastronomy in the world. Paris est une fête, a Moveable Feast as described in Heminghway’s memoir paying tribute to his years as a struggling young expatriate journalist and writer in the 1920s.

Cheese cream filled savory choux pastry

Photo : Valerie Szewczyk INGREDIENTS (for about 35 choux pastry) 125g milk 125g water 100g butter 100g gratted (comté or emmental) cheese 150g all-purpose flour 200g eggs (4 large) 200g cheese cream 60g of fresh aromatic herbs : tarragon, chive and chervil 5g ganulated sugar Salt and ground pepper DIRECTIONS :    Preheat oven to 170°C ( 340°F ) Prepare your cream cheese with finely chopped aromatic herbs : tarragon, chive, and chervil. Season with salt and ground pepper. Reserve in the fridge. In a pot, mix water, milk, butter, sugar, and a pinch of table salt. Bring to a boil. Once butter has completely melted, take off flame , and pour flour all at once , stirring constantly.  Put pot back on flame and continue to work it with a spatula for less than a minute.  Continue stirring and kneading until the dough dries out and stops sticking to the sides of the pot. KING CAKE EPIPHANY TRADITIONAL CELEBRATION...

In the beginning of January, French bakeries are filled with exquisite puff pastry pies that are called “ Galettes des Rois ” in France but also "King Cake" in the US. Epiphany is a traditional Christian feast celebrating the 'shining forth' or   revelation   of God to mankind in human form, in the   person   of   Jesus Christ.  The name "Epiphany" is a greek word meaning revelation.
